CHRISTMAS is a time to eat, drink and be merry – but it can be hard to know what to do with all those leftovers?

Well, one foodie has revealed a handy recipe that will turn a festive treat into a tasty, low calorie dinner.

Though this might sound like it’s too good to be true, influencer Jess has given Nigella Lawson a run for her money with this festive meal.

On her Tiktok channel @weighlesswith_jess, the festive food shared her go to meal – which is pigs in blankets carbonara – yes, you read that right!

At only 651 cals and with over 39g of protein, this is must for anyone wanting a healthier alternative after consuming endless chocolates on Christmas Day.

Even better it only uses five ingredients to serve two people, most of which will already be in your house over the festive season.

Alternatively, you could raid your local supermarket for the heavily reduced items after Boxing Day.

To start though, you’ll just need 50g of parmesan or any finely shredded cheese of your choosing.

Combine this with three eggs and a generous amount of black pepper, then mix with a fork to ensure there are no lumps.

After this is done, you can then prepare the rest of this tasty meal.

If you are unfamiliar with orzo, it’s a type of pasta that almost resembles rice and can be cooked in just five minutes.

Just fill a pan with salted water and 130g of orzo, then boil according to the instructions on the pack.

For those that don’t have this ingredient lurking in their cupboards, you can also switch this out for any pasta you already have a home – just make a note of the cooking time.

Whilst this is heating up, you can fry 70g of bacon pieces in a pan – making sure that it is extra crispy.

You can also warm your pigs in blankets, ready to be combined with the bacon, parmesan mix and your orzo – which should be cooked and strained.

Keep your pasta water and add a splash of it as you stir this in your pan, which should be starting to resemble a classic carbonara.

Now, you are ready to serve in two large bowls with extra shredded cheese and some parsley, to make it even more scrummy over the festive season.

Unsurprisingly, Jess’s fans have been going wild for the Christmas meal and how easy it is to cook.

One wrote: “Orzo carbonara is an underrated dish honestly, I love making carbonara with smaller pastas.”

“Oh I’m literally making something similar right now,” another wrote, adding that they’d put a twist on the simple dish:  “Just about to chuck a load of ripe Brie in.”

A third joked: “You are killing me with these recipes.”
