She shared her high protein, low carb dinner idea that helped her lose 50 pounds post-partum – and it’s mouthwatering.
To make the chicken fajita nacho bowl, as she calls it in the clip, begin by toasting both sides of a low-carb tortilla.
Then, press it into an oven safe bowl and bake at 350 degrees for five to eight minutes, so that it maintains the shape of the bowl once cooked through.
While that cools, start making your filling.
Cut four ounces of chicken into strips, and air fry along with veggies of your choice – she opted for onions and bell peppers.
To ensure the fillings were full of flavor, she covered them with her homemade seasoning combo, which includes ¼ teaspoon of garlic, chili powder, cumin, oregano, salt, and pepper.
Once you’ve cooked those at 400 degrees for about nine minutes, flipping and shaking around halfway though, they’re ready to go inside the tortilla bowl, along with shredded lettuce.
Top it off with two tablespoons of queso dip – a treat that she said “is fine” to eat in moderation, despite many thinking it’s unhealthy.
“The macros are so nice, you can easily eat two if you want,” she said, noting that it has 248 calories, 6 net carbs, and 34 grams of protein.
“These turn out perfect every time and are so customizable.”
