A BAKING expert has revealed how the color of a pan affects the color of freshly baked cakes.

The TikToker’s secret has shocked the internet and made viewers of his video rethink the way they bake.

Benjamin, known on TikTok simply as @benjaminthebaker, regularly shares his baking expertise via the social media platform.

“Whether its cookies, cakes, or brownies, the type of pan you use has a big impact on how your desserts bake,” he began his video on pan color.

“Cookies baked on a dark tray will have a more crispy edge, and the bottom will brown more than those baked on a light tray,” he explained.

When it comes to cakes, the baking expert explained that, because darker-colored metal conducts heat more rapidly than its lighter-shade counterpart, the bottom of the cake will be darker.

This also explains why the edges of a cake baked in a darker pan will finish more rapidly.

The result is a “shorter cake with a more rounded top and a thick crust,” according to the baking expert.

Brownies that are baked in a dark pan make for edges that cook very fast, “before the middle has a chance to catch up.

If you prefer brownies with a harder edge, Benjamin said, this is perfect.

To bake your brownie batter into a treat with a softer perimeter, a lighter pan should be used.

For one commenter, the choice to use a darker pan came down to aesthetics.

“Well damn I just like the look of dark trays better,” they said.

Another viewer wondered why they didn’t come to this conclusion on their own, saying, “This is so obvious after it is explained, and I never ever thought about it before said explanation.”

A third TikTok user didn’t need Benjamin’s advice, as they were not looking to change the finished product of their baked goods.

They said: “Well, I like crispy edges.”
